Mutton Nihari Recipe

Nihari is categorized as the most popular thick curry dish that has its unique taste. Mutton Nihari is made using Mutton meat, all purpose flour, cinnamon sticks, cardamom, Garam Masala, ginger garlic paste, chili powder, coriander powder, fennel seeds, yogurt, nutmeg, cloves and bay leaves.

Ingredients

  1. Mutton – 1 kg
  2. All purpose flour (Maida) – 2 tablespoons dissolved in 1/4 cup of water
  3. Turmeric powder – 1/2 teaspoon
  4. Cinnamon stick – 1
  5. Bay leaves – 2
  6. Cardamom – 2
  7. Cloves – 8
  8. Garam masala – 2 tablespoons
  9. Ginger garlic paste – 2 tablespoons
  10. Chilli powder- 1 tsp
  11. Coriander powder – 1 tsp
  12. Yogurt – 3 tablespoons
  13. Ghee or cooking oil – 1/2 cup
  14. Nutmeg – Few pinches
  15. Spice masala:

  17. Fennel seeds – 2 tablespoons
  18. 1/2 teaspoon whole black peppercorn
  19. 1/2 teaspoon cumin seed
  20. Ingredients For Garnishing:
  21. 1 Onion fried to brown
  22. 2 Green chillies chopped
  23. 2 Ginger strips sliced
  24. 3 tablespoons coriander leaves chopped

Method

Clean the mutton and cut into medium pieces. Heat oil in a pan and add bay leaves, cloves, cinnamon stick and ginger garlic paste. Add the mutton and fry for 2 to 3 minutes. Now add red chilli powder, coriander powder, turmeric powder, yogurt, garam masala and fry until the oil separates. Add the nutmeg, cardamom, spice masala and 3 cups of water and cook on low heat for 3 to 4 hours. Finally, add the flour and cook for about 10 minutes. Garnish with coriander leaves, ginger, onions and green chillies. You can serve mutton nihari with chappati, naan or rice.

Mutton Biryani is a delicious rice dish. It is cooked by layering boiled rice with Mutton curry. It is perfect traditional dish that is known for its aromatic Biryani Masala made with mixture of ginger, garlic, cinnamon, peppercorns, coriander, poppy seeds, and all essential Garam Masala to give your dish a perfect blend.

Ingredients

  1. 1/2 kg Mutton
  2. Basmati Rice 2 Cups
  3. Few flakes garlic
  4. 3 tsp Coriander powder
  5. Dried coconut
  6. 1 Inch stick cinnamon
  7. 3 Green chillies
  8. 1 tsp Chilli powder
  9. 1 Cup onion
  10. 1 Inch piece ginger
  11. 1 tsp Poppy seeds
  12. 3 Cloves, peppercorns and cardamoms
  13. 1 Cup curd
  14. 1/2 Cup onion
  15. 2 Bay leaf
  16. 8 tbsp Fat
  17. Salt to taste

Method

  • Clean the meat and cut into pieces.
  • • Soak the meat in curd.
  • • Roast cardamom, cinnamon, peppercorns and powder cloves. Make powder.
  • • Grind ginger, red chillies, green chillies, half the onions, garlic and copra.
  • • Now heat fat in a pan. Add chopped onions and ground spices.
  • • Fry until onions turn golden brown.
  • • Now add meat and fry well. Add poppy seed powder.
  • • Add salt and remaining curd. Cook till meat becomes tender.
  • • Add powdered spices to it and remove from the flame.
  • • Chop remaining onions. Fry them in fat in a separate pan.
  • • Add cloves and bay leaf.
  • • Fry for few minutes and add rice. Fry for another few minutes.
  • • Put salt to taste and make the quantity of water double.
  • • Remove from the flame when rice gets cooked and no moisture is left.
  • • Arrange a part of cooked rice in a pan and sprinkle saffron water over it.
  • • Place the meat over it and cover with rice layer once again.
  • • Garnish with fried onions and nuts.
  • • Mutton Biryani is ready.
